Cumin Seared Ahi Tuna with Fresh Fruit and Jicama Salsa Taco


8 oz Fresh Ahi Tuna
2 Tablespoons Cumin
4 Tablespoons Vegetable Oil
1 Cucumber Julienned
4 Soft Taco Shells


4 Ounce Strawberries Diced
4 Ounces Jicama Shredded
4 Ounces Pineapple Diced
1 Pinch Chili Powder
6 Leaves Cilantro Diced
2 Leaves of Fresh Mint Diced
1 Ounce Red Wine Vinegar
Once Pinch of Sugar
Juice of 1 Lime
1 Ounce Tomato Juice



Combine all ingredients and set aside


Slice Tuna very thin

In a heavy sauce pan on high heat, sear tuna in oil two minutes on each side sprinkling with cumin in the process

For the arrangement on a soft taco shell, place two slices cucumber, two slices tune and healthy amounts of salsa topped with sour cream

Fold and enjoy!
